From Apres-ski up in the mountains to a good ol’ fashioned brunch in the comfort of your own home, The Bellini is a classic cocktail that has stood the test of time! We’ve done a couple variations on this easy sipping peach sparkler to make it a little more festive! With the addition of The 86 Co Cana Brava Rum, having notes of sweet baking, such as molasses, allspice and cacao, this spirit fits the mold for this little bubbly dazzler! We’ve also poached peaches in warming spices including vanilla, cloves and star anise before turning it into a silky sweetened puree.

Brava BelliniĀ 

45 ml The 86 Co Cana Brava Rum

30 ml Lemon juice

10 ml BG Reynold’s Cinnamon syrup

30 ml Spiced Peach Puree

Combine all ingredients, shake over ice, fine strain into chilled coupe

Top with sparkling wine and garnish with a lemon peelĀ
